Recap of our 2nd KarmaFree Cooking Class – Love Yourself First

Last week we had our 2nd KarmaFree Cooking class and our theme was Loving ourselves first thru our Food. Sometimes, we only cook nice things when we’re cooking for others. But why not cook something nice even if it’s just us in the house??

The recipes we shared are old and new KarmaFree Cooking recipes that work well made just for one person, for two or for a crowd. These are simple, quick and delicious recipes that work well to make just for you on a solo movie night at home and just the same are not much more effort making for a large dinner party.

Even though these were all recipes we had shared in the blog before, it’s never the same reading and making them on your own as seeing how I make them, after I have made them over and over and over again. Your words… not mine.

Plato Completo - KFC2

The class is not only about sharing recipes and techniques. We also talked about alternative pastas… we talked about my favorite olive oils and vinegars. We also talked about microplanes and rasps to grate lemon zest and how I do not like to rinse pasta after I drain it. We also shared how the same ingredients for the Marinated Tomates can be used in a bruschetta as an appetizer or skewered to make for a fancier passed hors d’oeuvre.

I am so grateful for all of those who attended… we had a larger class this time around. Some repeats and some new students. I want to give a great shout out to Adriana from Great Food 360 who attended once again and contributed with the wonderful pictures. She rocks!!!

Mango Strawberry Pineapple Smoothie

This is kinda like a Mango Lassi, but with more fruits which makes it perfect for a breakfast drink. I am trying my best to keep my new year’s resolution of eating more fruits each day.

Mango Strawberry Smoothie 2

MANGO STRAWBERRY PINEAPPLE SMOOTHIE

½ banana
4 strawberries
2 fresh pineapple rings
1/2 cup mango nectar
1/2 cup water
½ cup plain yogurt
1 tbs agave nectar
1 tbs ground flaxseeds
4 ice cubes
  1. Blend well in a blender… That’s all to it.

Strawberry, Pineapple and Orange Smoothie

Keeping with my new year’s resolutions, I am a smoothie inventing machine. I just start mixing and matching fruits and flavors. Sometimes I like what I make, but sometimes I like it a LOT!!!! Here is another favorite combination…

Smoothie Collage

STRAWBERRY, PINEAPPLE AND ORANGE SMOOTHIE

2 fresh pineapple slices
4 strawberries
½ banana
1 cup orange juice
½ cup plain yogurt
1 tbs agave nectar
3 ice cubes

 

  1. Blend everything in a blender or your Magic Bullet…

 

You can certainly add any supplement like ground flaxseeds, raw oatmeal or bee pollen.

 

Updated Tropical Cream Supreme Breakfast Smoothie

As a New Year’s resolution I vowed to eat healthier… and making sure I eat my servings of fruit a day is certainly part of it.

I love the Tropical Cream Supreme combination from the Orange Juluis. To be honest, I don’t even know if this fast food joint still exists out there. Possibly I should Google it. But I know these flavors are part of my growing up. But sometimes, we need to change things up…

So here is my updated version of the Tropical Creme Supreme and it’s become my new favorite breakfast smoothie.

Updated Tropical Cream Supreme

UPDATED TROPICAL CREAM SUPREME BREAKFAST SMOOTHIE

1 banana
4 strawberries
¼ cup frozen mango
½ cup plain yogurt
1 cup passion fruit juice
A squirt of agave nectar or honey
1 tbs of ground flaxseed
  1. Blend all the ingredients in your blender or Magic Bullet.
  2. Serve cold.

Mango Strawberry Smoothie

We had a great season for mango’s this year and we froze a lot of it for out-of-season enjoyment.

Mangos and strawberries pair very well together… and ripe mangos provide a touch of tropical goodness to any breakfast smoothie. This has been my smoothie of choice for the last few weeks.

MANGO STRAWBERRY SMOOTHIE

1 cup of mango pieces
½ cup of strawberries
½ cup pineapple or orange juice
½ cup water
2 tbs plain yogurt
1 tbs agave nectar
4-5 ice cubes – I use these if the fruits are fresh and not frozen
  1. In a blender mix together all ingredients…

Enjoy all its deliciousness. It’s tangy and sweet all at the same time… you don’t taste the pineapple at all, but if in a pinch, you can use only water.
