Nuggets with MayoKetchup

Mayo what?????

People who are not from Puerto Rico usually ask me that question when I mention the Puerto Rican concoction MayoKetchup.  It’s exactly what it sounds like… a mixture of mayonnaise and ketchup. 

Who invented it?  I don’t know.  I do know that some guy registered the name and the mixture, bottles it and sells it in supermarkets.  But why pay someone to mix something you already have in your fridge or cupboard?  I’ll show you how.

Egg-less mayonnaise
Ketchup
Garlic Salt to taste
  1. In a bowl, mix 1 part ketchup to 1 1/2 parts mayonnaise… the thing is to have a bit more mayo than ketchup. 
  2. Sprinkle and mix in some garlic salt to give an added dimension of flavor to the sauce. 

Use this to dip your favorite snacks…  I used it today to dunk some veggie “chicken” nuggets.  This is my version of fast food at home.  I also use it to dunk corn sorullitos, potato chips, and even as a base for a Thousand Island dressing.

Strawberry Banana Smoothie

As part of my New Year’s resolutions I have to eat more fruits and vegetables…

I wish I had the time to make myself a huge fruit salad every morning, but I don’t.  So my alternative is to make myself a fruit smoothie every morning.  I try to mix up the fruits to use what’s in season, but also to suit my cravings.  I also try to add ingredients that will increase my protein and fiber content in the smoothie, such as soy protein powder or oatmeal.

This is the smoothie I made this morning…  strawberry banana with passion fruit juice.  It’s yummy…

STRAWBERRY BANANA SMOOTHIE

1 banana
3 medium strawberries
1/2 cup plain or vanilla yogurt
3/4 cup fruit juice – orange, passion fruit, pineapple would all work
2 tablespoons of oatmeal
squirt of honey, optional
a few ice cubes
  1. Mix all ingredients well in a blender.
  2. Add a little water if it’s too thick.

Other fruit combinations I like:

papaya and mango

papaya and banana

strawberry and orange juice

strawberry and kiwi fruit

mango with passion fruit juice

mango and orange juice

blueberries and banana

raspberries and pineapple juice

My favorite mayonnaise… Vegenaise

Just wanted to share with you my favorite brand of egg-less mayonaise… Vegenaise.  Particularly, the grapeseed oil variety.  It’s creamy, thick, rich… the closest thing to Helman’s Mayo.  You’ll find it in the refrigerated section of your neighborhood health food store.

Hi my karma-free friends!!!!

I am back from my days off.  It’s funny, but for someone who enjoys cooking and eating so much and has this food-related blog, here I am coming back from a holiday of fasting.  Yes… you read right.  I spent the last 7 days of the year at a yoga spiritual retreat without eating solid food – only drinking water, lemon juice and honey. 

To me, this is the best way to spend the last few days of the year… it brings you closer to the real meaning of Xmas.   Celebrating our spiritual side of life and away from the commercialism that Xmas has turned to be.

Even though it may sound weird to you at first, it’s the best way to finish and start the new year.  We prepare 3 days prior to the start of the retreat…  we go from eating everything, to eating only salads, fruits and natural juices.  Then we go to fruits and juices, finally ending just with juices prior to the start of the retreat. Also, the night before the start, we do a big “cleansing” to clean out our digestive tract as much as possible… Some people do it by drinking pure pear juice, but I do it by drinking a gallon of coconut water and pure kiwi juice.  If you’re ever constipated, drink a 1/2 gallon of coconut water in one sitting… it works for me.

We spend the 7 days from Dec 25 until Dec 31 in “mauna”, or being silent, trying to eventually learn to actually silence the mind.  I have to be honest… my mind keeps cooking everyday, thinking of new recipe ideas, menus, etc.  You’ll be able to see and read the results of all my “cooking” ideas from the retreat.

We meditate for 9 hours everyday, in 2 hour intervals.  We get up at 3AM, start meditating from 4-6AM, rest 2 hours, meditate from 8AM-10AM, do hatha yoga, meditate again, and so on until we go to bed at 9PM.  And every-time we start a rest period we need to drink about 10-12oz of water with the juice of a 1/2 lemon and 2 tablespoons of honey.  This is a great way to rest, detoxify your system, because your body’s energy is not spent talking or digesting food… therefore it uses all its energy to cleanse, eliminating a lot of toxins accumulated during the year.

It sounds hard core, but it really is fun.  We then start talking and eating again when we say goodbye to the 2007 and hello to 2008.  Here’s a photo of some of us after welcoming the new year.  We are all at least 2 lbs thinner.

Egg-less Frittatas

 This recipe has many ingredients, but it’s easy to assemble and TASTY!!!!

I took them as an addition to a non-vegetarian party and they were all gone in about 10 minutes… my best friend and her mom almost did not get a chance to try them.  If non-vegetarians were devouring them at a Christmas party, image how good they taste.

EGG-LESS FRITTATAS

1 package of firm silken tofu, drained of water
1/2 cup of soy milk
4 tablespoons of cornstarch
2 oz goat cheese – I used half of a small log
1/2 cup sour cream
squirt of Dijon mustard – about 1 teaspoon
1/4 teaspoon turmeric
1 cup of frozen chopped spinach, thawed and drained of as much water as possible
1/2 cup sun-dried tomatoes, without sulphur dioxide
1/2 cup of chopped grape tomatoes
4 green onion stalks, chopped
2 garlic cloves, minced
2 tablespoons flat leaf parsley, chopped
1/4 teaspoon garlic and herb seasoning
Salt and Pepper to taste
Canola oil spray
  1. Pre-heat oven to 375 degrees F. 
  2. Place the first 7 ingredients in a blender.  Process until completely smooth and silky.
  3. Place tofu mixture in a large bowl and add the spinach, sun-dried tomatoes, grape tomatoes, garlic, parsley, seasoning, green onions, salt and pepper.
  4. Lightly spray 2 muffin tins with canola oil spray.  Spoon mixture into muffin pans using a 1/4 cup measure.
  5. Bake in oven for about 30 minutes until they’re set and a bit golden on top.  Check that a knife or wooden skewer comes out cleanly before removing from oven.
  6. When they’re done, remove from oven and let cool for about 20 minutes.  When they’re cooler, they’ll come out from the pan neater and nicer.

They’re light…  you can serve them as a party appetizer, you can also serve them as a nice brunch entree with a nice green salad.  I guess you could also bake it in a baking dish and cut it into pieces instead of doing individual servings… I just have not tried it like that yet… so I am not sure if we’ll need to make adjustments to to baking time.

This recipe yielded me 20 individual fritattas.

 This is my last post of the year.  I will take a few days off from cooking and blogging.  This has been a wonderful few months… I promise to come back in the new year with new added inspiration to cook and share with you all.
