Puerto Rican Cheese / Queso del País

Every country has their signature white young cheese… Mexico has Queso Fresco… Greece has Mild Feta… Italy has Ricotta Salata… India has Paneer… I am sure there are many other examples out there. Here in Puerto Rico, we have Queso Blanco or what we also call affectiously – Queso del País… meaning made here, in THIS COUNTRY.

I love Queso Blanco… it’s a white, hence the BLANCO in the name, mild and almost bland cheese. The most famous brand is Indulac, whose factory is very close to where I grew up in Hato Rey, a section of San Juan. But most Quesos Blancos are made by smaller producers and many times sold on the side of the street when you go outside the Metro Area.

 

 

A few weeks ago I took a trip to Camuy, on the Northwest side of the Island, and had the chance to buy some great Queso Blanco made right there in Camuy. The Nortwest part of Puerto Rico is well known for its dairy farms and its milk… so it’s no wonder they make great cheese too.

My granddad was from Isabela, very close to Camuy and his favorite was Quesito de Hoja – sold wrapped in folds of paper, hence the name too. Unfortunately, I have not bought Queso de Hoja lately because for some reason they’re adding artificial colorants and the moment I read FD&C on a label, I longer need to continue reading and I leave the cheese right where I took it.

 

Now that you know about Puerto Rican Queso del País… I will share a few recipes where you can enjoy it. Don’t get me wrong… this cheese can be fully enjoyed right out of the package – with a slice of guava paste or on the side of a dulce de papaya. But there are a few other ways you can also enjoy this delicious cheese… let’s explore them next.

Vegetarian Cooking Class… in Puerto Rico

If you live in Puerto Rico and what to learn some hands-on vegetarian cooking skills…  this coming Sunday, April 17, Centro Cultural Yoga Devanand will be holding a Vegetarian Cooking Seminar open to the general public.

This is how I started my vegetarian culinary steps…  You’ll learn from the same people who taught me how to make textured soy protein, brown rice and tofu scramble.  I still do not know the menu of this workshop, but I can assure you, you’ll learn tons and will have lots of fun in the process.

Puerto Rican Typical Xmas Menu

Xmas season in Puerto Rico is very special… I do enjoy the snow and the caroling as I have spent several Xmases in either NYC or Miami, but Xmas season is different here.  This is what’s normal and typical for me:  Sunny days to enjoy it at the beach with some cooler breezes, houses decorated with multi-colored Xmas lights, a festive ambiance all over, typical  “parranda” music, parties of all sorts to celebrate the season and to welcome the new year approaching.  The cold weather is only felt when you go to the mountains in the center of the Island…

 And a great part of what makes a Puerto Rican Xmas special is the typical menu.   The Puerto Rican typical menu is not fully vegetarian… but if we just omit certain ingredients that are not essential in the basic traditional recipes, they can certainly be enjoyed by everyone.  The essence of the Puerto Rican menu is certainly present in this spread here:

Potato Salad

I know this may sound out of season…  my former college roomate told me potato salads are a summer salad, not for the holidays, but here in Puerto Rico, arroz con gandules and potato salad are a key part of the holidays.  Even if someone serves the combination at some point in the year, the comment is that you’re eating holiday food.

OK… I’ll come clean here.  Some of the recipes I have already shared with you, but I’ll share with you other new recipes I have made before at some point but, they’re not mine.  Hey, I may not even master them fully.  But I feel confident you’ll be able to follow them and execute them successfully.  Here’s the thing…  I am too young still to be THE ONE making the bulk of the Xmas cooking.  These dishes are always made for family gatherings or activities at the yoga center by the “grown-ups”.  I have just helped make them many, many times, but I have never done these recipes all by myself.  So please accept my apologetic disclaimer…. And enjoy a Puerto Rican vegetarian Xmas…
