Best of KarmaFree Cooking – 2012 Edition

I am so happy for everything that has happened during 2012…

It’s been a great year, filled with lots of travel, personal accomplishments and even a brand new baby niece!!! I am super appreciative that you guys continue to visit KarmaFree Cooking and enjoy what I share about my vegetarian lifestyle.

A better Puerto Rico is within our grasp…

We have a Facebook group of blogger friends from Puerto Rico. It’s funny, but none of us have ever met each other in person. As nice Xmas gesture, we decided to collaborate by writing guests posts in each other’s blogs. We were paired with another blogger and my partner was Meryland from Otros 20 Pesos.

Otros 20 pesos is an expression we use colloquially to refer to “something beside the point”. Meryland uses her blog to discuss and create positive social consciousness. She shares ideas, thoughts and information to make her readers react and reflect. This made me share with her readers my vision on a topic very important to me – the well-being of Puerto Rico and the world we live in.

A BETTER PUERTO RICO IS WITHIN OUR GRASP…

Social networks have been filled the last few weeks with cries for peace… desperate shouts from people who are sick and tired that the drug wars are being fought in our own backyards. It’s a mass cry to live in a more tolerant world and society.

What has surprised me of this whole movement of asking and demanding peace… is that most people believe it’s something that someone else is not doing. I am OK… I am part of “the good people”. The “bad ones” is someone else… those who are taking peace from us.

Have you ever sit down and think thoroughly how YOU are contributing to peace in Puerto Rico? Have you analyzed how much YOU could be contributing to all the animosity and negativity in our country YOU so much detest??

We create our OWN desitny

I practice YOGA for 12+ years now and one the YOGA teachings is we are the architects of our own destiny. We are taught of the law of “cause and effect”… of the Law of Karma, which is a universal law that’s always at play whether we believe in it or not.

According to the Law of Karma, we reap what we seed. So if we plant love, positivism and happiness, that’s what we’ll get out of life. On the same hand, if we plant animosity, hate and resentment, that’s what life will have for us in return. It’s just like a boomerang… And how do we “plant”? We plant via our actions, words and thoughts. If we speak, do and think positive and constructively our life will reflect it too.

If this law is in effect 24/7… and what we get out of life is the exact product of what we do, think and say then, what happens in Puerto Rico wouldn’t it be the product of what the people in the Island do, think and say too?? Think about it…

We have no control of what others do, think or say… but we have full control, or at least try to make a conscious effort, of what WE do, think and say. It’s all in our attitude. If we make a conscious effort to have a more positive outlook on life, we’ll see how our surroundings will change for the positive. Focusing on the positive, the negative will start of disappear.

Reconnecting with my True Self

One of the thoughts and actions we have every day is the decision on what to eat. We decide if we will feed ourselves with something that contributes to our health or not. When I started practicing Yoga I developed an awareness of the effect of what I put in my mouth with my health, inner peace and the harmony in my surroundings.

It was not a sudden decision. But day by day, through exercise, diet, meditation and many other actions, I have made great progress in living a healthier, happier life. I noticed I preferred more natural and vegetarian alternatives. These little decisions gave me more inner peace, not use as many dirty words and I started welcoming the occurrences in my daily life with much more ease. Hey… I do sometimes still struggle with some of my past issues. I still lose it once in a while, but this happens less and less as time passes by. But we cannot give up. We must correct ourselves as soon as possible and move forward again.

To be healthy is to be happy. Our happiness is directly related with our overall health. Good health is not the absence of illnesses. Our overall health is made up of mental, social, intellectual, spiritual, emotional health. And the key to improving our environment is to make a conscious effort that our actions, even what we eat each day, affect this environment.

Be the Change you want in the World

By doing small, positive and healthy changes in your daily life you can also make a difference in the world. Maybe you never considered it before, but integrating a more natural and vegetarian lifestyle can certainly have a positive effect in your life and on society.

Individual wellness becomes collective wellness. A society of unhealthy people becomes a sick society. Start with yourself. Just like Michael Jackson said – start with the man in the mirror. Set the example FIRST and inspire others to do the same. We can create the Puerto Rico we want to live in. One person at a time. One action at a time. One thought at a time.

Gandules de Lula

Inspired by the Shop Small movement… I want to encourage you to gift things that were made by you or someone you know. I am a small business owner and ever since becoming one I am a firm believer in helping out other small business owners.

Last weekend I took to my sister’s baby shower a batch of Gandul Antipasto, or Pigeon Peas Antipasto, made by Lula. Lula is a girl I know from where we get our mani/pedis done. She also can cook a mean gandul. Lula sells her Antipasto de Gandules from her home. Is a small operation, so if you call her to the number on the flyer, she can certainly hook you up with some.

These gandules were one of the HITS of my sister’s baby shower. Everyone thought I had made them and were asking me for the recipe. But no… I flew them in from Puerto Rico. I do not eat beans that much. You know this already… but these are DELICIOUS!! Tangy and savory with garlic and a touch of cilantro.

Restaurante Jerusalem – Eating Vegetarian in San Juan

Many of you have asked me where to eat delicious vegetarian food when visiting San Juan… I even once wrote an article in Serious Eats on my favorite restaurants in San Juan and Jerusalem was definitely on that list.

Ever since I returned from a trip to Israel in April 2000, I have been enamored with the flavors of the Middle East. We spent our days eating mostly falafels, hummus, pita bread and salads. That was our menu almost every single day. And when we returned to Puerto Rico, I wanted to remember all the flavors of those travels. It was a magical trip and Jerusalem was the only restaurant that made me go back to the flavors of Israel.

In my opinion, Jerusalem has THE BEST Middle Eastern food in Puerto Rico. There are several Middle Eastern restaurants here, most of them located in Roosevelt Ave. , but none of them stand close to the food at Jerusalem.

Jerusalem has, in my opinion, the best falafels in Puerto Rico. They taste fresh and light. I am not the greatest fan of tahini sauce, but I consider Jerusalem’s tahini sauce the best as well.

I usually order the hummus as an appetizer. The olive oil on top of it tastes so fruity and delicious…

Another reason why I love to eat at Jerusalem is because they serve a vegetarian kabob platter that I just love. It is grilled tomatoes, peppers and onions served with rice and the arab salad of tomatoes, cucumbers, onions, cubanelle peppers, parsley dressed with lemon juice and olive oil. I am making myself hungry just writing about this right now…

When people want to invite me to dinner… I usually suggest Jerusalem. It has a little bit of everything and even when you’re ordering vegetarian food it does not feel like you’re missing out on anything of the traditional flavors of the region.

I want my Gatorade Natural!!!

Have I told you???? That I am training for my 1st ever half marathon???

Well, since June I have been training for the Run Like Diva Half Marathon to be celebrated next Sunday, November 11 here in San Juan, PR. This is the second time this is taking place. My friend Tania was eager for me to join her this year because she was encouraging me since last year to make it.

It’s been a super great experience… I have met so many new friends – Annette, Maritza, Tere, Lilliam, Nadya, Alice, Zuleyka, Ada, Vanessa, Nancy, Mariano, Diana, IsaMari, Lisandra, Kimberly and Tania and Mili who now I have one more thing in common. We belong to the training group Island Divas coached by Chewy Candelario.

Since the beginning of the training, I was opposed to drinking anything filled with artificial colorants or ingredients. You know already how I feel about that. However, for a while when we started training I always felt like my body ached all over. I thought it was just my body getting used to this kind of training. Until one day, my friend Annette told me to drink a Gatorade. WHAT?!?!??! I don’t like these… “agua d’piringas”. But I caved in and had one…

To be honest ever since I started drinking Gatorade after my trainings, I started feeling like myself again. By body might have been sore, but did not feel like before. I guess all that science and technology do count for something when you’re becoming an athlete. So I have made an exception and started drinking Gatorade as a recovery drink after my workouts. And have chosen to avoid reading the label each and every time I put one bottle to my mouth.

But when I traveled to Florida recently and had to continue on my training there, I went to the supermarket to buy my trusted and usual foods that help me prepare and recover after my trainings. And much to my surprise I found out that Gatorade comes in a NATURAL version – without artificial ingredients and colorants. And the website tells you all about how the natural ingredients work just the same as the regular Gatorade formulation. And the Orange Citrus flavor is AMAZING!!!!!

But when you search any Puerto Rico zip code to find a store near us that carries it, the closest store is…. The Whole Foods in Alton Road in South Miami Beach!!!!!!!!! Yeah!!!!! Which tells me, my dear friends in Pepsi are not distributing this amazing product in Puerto Rico. YET!!!

This is my plea… PEPSICO people, please bring Gatorade Natural to Puerto Rico. We also have athletes which appreciate the recovery qualities of the original formulation but prefer to have a more natural formulation. Just as much as I want a Whole Foods in Puerto Rico, we also have local natural supermarkets and sport stores that would love to carry your product. GRACIAS!!!
