Home Remedies – Pure Lime Juice to stop Nausea and Vomiting

23 Apr

Sorry that we’re talking about these unsightly symptoms… but if we like to eat, sometimes, unfortunately we’ll eat something that does not agrees with us. It’s life…

I have found that drinking the pure juice of 1-2 limes when I have nausea helps ease the stomach in such a way that it settles in a little while. This is partly the reason why I always like to have limes and lemons in my kitchen.

Lemons and limes are acidic in the outside world… but when ingested, they alkalinize the blood and eases any upset stomach symptom. I am no scientist, but I have used this remedy many more times than I would like to admit. And it works. I squeeze the juice out of the fruit and drink it like a shot – all at once.

Lime juice is also good to stop diarrhea. If by any chance you have “the runs” and they won’t stop… try drinking a shot of lime juice to see if you feel better. I have a friend that took a colon cleansing tea… and afterwards she would not stop going to the bathroom. She was getting worried and drank some lime juice and “the runs” stopped. It’s an amazing remedy…

Hope you never have to use it. But if you do, now you know a natural way, right??

Mojito Criollo

19 Apr

When I’m on a hurry to eat but without any time to actually cook anything… I boil potatoes. I boil them by themselves or with any other root vegetable I have in my fridge – yautías, malangas, batatas (sweet potatoes), etc.

But potatoes by themselves are kinda boring, no?? But with a Mojito Criollo… not so much.

I like to eat my yuccas with a Cuban-style mojito. But in Puerto Rico, people prefer their mojitos with some tomato in it. And we’re not talking the alcoholic drink mojito… we’re talking something you use to “mojar” or dip your potatoes in. It’s a super versatile sauce. This is how I make it…

MOJITO CRIOLLO

2 large tomatoes, chopped
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 yellow onion, sliced into strips
1 red onion, sliced into strips
2-3 garlic cloves, smashed
Olive oil – about 2 tbs
Salt to taste
Garlic & Herbs Seasoning
The juice of 2 limes
  1. In a medium saucepan over medium-hi heat, pour the oil and add the onions, peppers and garlic cloves. Sautee for a few minutes until everything starts wilting a bit. Season with some salt to help that wilting process.
  2. Add the chopped tomatoes. Season with additional salt and the garlic & herb seasoning. Mix well to combine. The moisture in the tomatoes will start to create the sauce. Cover the sauce pan and lower the heat to medium-low. Allow the mixture to cook and the flavors to meld together for about 10 minutes.
  3. When you feel the onions, pepper and tomatoes look cooked and “saucy”. Turn the heat off. Add the juice of the lime juice and mix well together. Let it rest for a few minutes before you serve over your favorite “vianda”.

This is the best way to eat potatoes or other boiled root vegetables when preparing for a fast or when coming out of one.

My crazy vegetarian life…

18 Apr

My apologies for being so quiet lately… but in the last 1o weeks I have been all over.  They say “be careful what you wish for…” and that is most certainly my case here.

In the last 2 months I have been to 7 countries in 2 continents, 2 hemispheres with complete climate differences, been to 2 spiritual retreats and have stamped my passport over 10 times.  Some travel was for leisure, some was for work… but I wanted to be known as a jet-setter and the Universe conspired to make it happen.

I’ve been busy taking pictures, making recipes and thinking of how would you guys also benefit from all these miles traveled.  So bear with me… I thought initially to create posts in chronological order of the places I have visited and what I ate, but I do not know if that will be possible.  But rest assured, I will share all the delicious vegetarian flavors Canada, Paraguay, Argentina, Brazil, Uruguay and several cities in the United States have to offer.

Let the delicious fun begin!!!!!

White Sangría

26 Mar

I am a sucker for a white sangría… Ever since I visited Spain for the last time about 5 yrs ago, I prefer sangrías made with white wine/grape juice than sangrías made with red. They seem fresher and lighter to my taste.

We made this sangría at Alison’s recently when she invited me to “teach” her a few easy recipes she could make at home for her husband. It was funny because it started like a cooking class, yet we ended up with a nice party entertaining her friends and family celebrating the inaugural issue of the online magazine Karma Life & Style. You might recognize someone as the food editor… hum, hum.

Sangrías are so simple to make and excellent to entertain a crowd. Just mix in a large pitcher, keep cool and enjoy. And make sure to have extra ingredients to make additional batches. I’ve never been able to make just one batch… it goes down smooth like juice!!!!

WHITE SANGRIA

1 bottle of non-alcoholic sparkling apple cider or grape must
1 32oz bottle of natural ginger ale
½ can of passion fruit juice concentrate
1 cup of freshly squeezed orange juice
1 granny smith apple, peeled, cored and sliced thinly
1 orange, sliced
  • In a pretty glass pitcher, mix all the ingredients together. Let the flavors meld together for about 30 minutes to 1 hour before serving.
  • Serve over ice.

Serve over ice.

Viva Pizza Sighting

23 Mar

Whenever I am in NYC, I MUST stop by Viva Pizza for 2-3 warm slices of whole-wheat or spelt crust cheese pizza and a China Cola. Bon appétit from me to me… Yum!!!
