KarmaFree Cooking nominated by US Hispanic Chamber of Commerce as 2012 Top Food Blogger

If you’re following my tweets and our FaceBook page you might already know that last week, KarmaFree Cooking was nominated for the 2012 HispanoBloggers Awards.   KarmaFree Cooking is nominated together with 4 other bloggers in the Food Category.

How did this happen????   I could not tell you at all, but it did. All I remember was that I joined HispanoBloggers.com and asked YOU, my fans, my friends, my followers to nominate me. Apparently, you responded my call and here we are now… WOW!!!

Bloggers in 11 different categories were nominated – Baby, Beauty, Culture, Family, Fashion, Food, Health, Kids, Life, Love and Parenting. The nominees were announced during the annual convention of the California Hispanic Chamber of Commerce.

Among the nominees we can find several of my blogger friends like Jeanette from Sazón Boricua, Yadira from El Club de las Diosas, Sofía from Living la Vida Blogging, Bren from Flanboyant Eats and Laura Termini from Natural, Orgánica y Latina.

Mango Passion Fruit Lassi

Believe it or not, I’m getting ready for my 4th trip to India next year… We will be visiting at early in the year to ensure we do not combust from the India heat felt April on. You would think that growing up in the Caribbean would prepare you for the Indian heat – NOOOOOO!!! We have breezes and sea around us… the heat in India feels 200 times hotter than any summer in Puerto Rico.

But I do love to visit India, especially for spiritual trips like the one I am about to make. Our love for mangos is something both our cultures, India and Caribbean,  coincide in. Lassis are one of the first things I learned about Indian cuisine and I just love to drink them (the sweet kind, of course) when I travel there. They’re a great way to keep the heat at bay – the heat from the climate and the heat from the spicy food you eat. And as much as I love eating a mango just as a fruit… I also love to make it into a smoothie.

This version of a lassi yogurt drink is something I came up with the other day as an experiment. The combination is tangy and not too sweet, just like a refreshing drink should be. It’s like India and Puerto Rico combined in a glass… maybe not too traditional but very, very delicious.

 

MANGO PASSION FRUIT LASSI

1 cup of mango, cut into small pieces
1 cup passion fruit nectar or juice
½ cup greek yogurt
2 tbs agave nectar
3 ice cubes
  1. Place all the ingredients in a blender and blend at a high speed until the mixture is smooth and creamy.

Enjoy as part of your breakfast or as a snack.

In the spirit of reusing, reducing and recycling I wanted to share with you some of my recipes and how do I use them and re-use them in other preparations. As a very wise Alton Brown once said in one of his TV shows – “There is no room in my kitchen for uni-taskers!!!” I think Alton was referring more to kitchen utensils and gadgets than recipes… but you get my drift.

In my everyday life I cook and eat most everything I post here in this blog… and when making a recipe, I sometimes have leftovers. Sometimes… too much leftovers for just one person to chow down. I personally try as much as possible to cook just for now and maybe, to have something for tomorrow… but in my ideal world, I would cook for just now and make everything fresh right before I eat it.

Something I learned from the Yoga Center is that if you’re using leftovers, at least combine them with fresh stuff to give the leftovers a new lease on life. You see… leftovers have lost some of its nutritional value because it’s been a while since they’ve been cooked. This is the exact same reason why I discourage the consumption of frozen prepared meals or that convenient idea of cooking one day for the whole week and then just reheat and eat it whenever you’re hungry. If it’s something you do occasionally… it’s not that bad, but doing it as a system, well, in my opinion, you’re always eating old food that’s not as healthy and nutritious as when it was originally cooked.

So here are my ideas to use recipes the next day converting them into new dishes altogether. This way, we use our leftovers right away and do not accumulate lots if little containers in our fridge. OK??

Whenever I make Bruschetta Mix, I eat some as a snack or appetizer, but I always try to make more than I think I’ll need and eat with pasta.

When I have leftover mashed potatoes – or just leftover boiled potatoes – this is a perfect opportunity to create a pastelón with it. Cook a filling made of veggies or soy protein and top with your favorite cheese…. And there you have a complete meal.

You are familiar already with my Meyer Lemon Thyme Granita recipe… if you do not want to eat it all as a granita, what I have done in the past is save pieces of the leftover frozen simple syrup in a freezer bag. And every time I want to create a fruit smoothie I supplement the ice/juice in my smoothie with a few pieces of the frozen lemon thyme mixture. The end result is a great tangy taste to your favorite morning drink… My suggestion, add a few pieces to a BB Shake – banana, blueberries, meyer lemon, thyme… YUM!!!

Anytime you have leftover rice, it’s easy to give it new life by adding a few delicious odds and ends you might have in your fridge. Just make your very own version of Millionaire Rice, the one that would cost you and arm and a leg if you had to go and buy so many ingredients to make, but it’s cinch just using up whatever you have cluttering up you fridge. Or make some Rice with Corn.  And if after making rice you still end up with a leftover, you can revive it once again into a Stuffed Pepper.

Cooked greens is not something I grew up with… eating spinach, for example, was an acquired taste I developed well into adulthood. If you make a version of creamed spinach to fill a spinach crepe… you can use any leftover mix into a Spinach Canelloni with the same crepes but adding some ricotta cheese to the filling and topping with tomato sauce. Add some more flour and create delicious Spinach Croquetas. You could even use it to fill a traditional Spinach Lasagna.

I hope you have learned a few tricks on how to give more mileage to the recipes you already know and how to use similar ingredients and flavors to enhance a brand new dish. This is kinda taking the semi-homemade concept to your leftovers.

El Palenque in Montevideo… Delicious Vegetarian Parrillada???

I love good food… and I particularly like to eat good food when I am traveling. I love to find out what are the best local places and experience what’s typical and traditional about a specific country’s cuisine and culture. And try everything, within my dietary playing field…

When I traveled for the first time to Uruguay in 2003 for work, we were taken to El Palenque in Montevideo. Located in the historical Mercado del Puerto we were told this was Montevideo’s most loved restaurants by far. It’s a parrillada restaurant and I do not have to tell you what is served traditionally in these parrillada places. But I have always been one to be resourceful when analyzing menus and I ordered the Provençal Mushrooms with French Fries. It was delicious and everyone was gawking at my plate to see what the vegetarian was eating…

 

I loved it so much indeed… that a few days later I went back to El Palenque by myself, sat at the very typical counter inside the market and ordered the exact same thing again!!! That’s me… that when I find something I love, I go back to the same place and order it over and over and over again.

 

Flash forward 8 ½ years later… I got the chance again to visit Montevideo, now as a day trip with my mom after a week in Buenos Aires. We took the Buquebus from Puerto Madero to Montevideo which in a few hours takes you across the Río la Plata. I was so excited to show my mom around Montevideo, a place I had very much enjoyed a few years back.

 

I was not sure of how I would find the city after all these years, but one thing I was sure of… we would have lunch at El Palenque!!! This is what we ordered:

I felt we could now have a salad because we are now 2 sharing this meal and not just me eating by myself. And check out how the server made the balsamic vinaigrette in front of us… so cool!!!

The food and the service were as good as I remembered it. Below you’ll find evidence if we enjoyed it or not…  Check out the pics from this trip and my first one… I think I look better now than what I did then, don’t you think???

 

 

I tried to locate another restaurant I enjoyed very much during my first trip – ROMA AMOR de Donatella, an Italian restaurant which taught me so much about enjoying delicious and beautiful food. It was sad it was no longer open. I really wanted to show it off to my mom and to you guys too!!!   😦

A tip to you travelers… Montevideo, for some reason, is mostly closed on the weekends. So much of what I enjoyed during my business trip, I was not able to show my mom because the streets were empty the Saturday we visited. So if you plan a trip to Montevideo, please keep that in mind when scheduling.
