Acid Fruits Salad 2

It’s summertime… and coming out of a retreat where I have not eaten cooked foods for the last 6 days, I am still not ready to cook anything complicated again. Although, I would eat anything and everything being from the latest Vegetarian Times Magazine issue… no kidding.

I never have the time or energy to make a fruit salad just for me…  I always mean to eat fruit salads for breakfast, yet I only get to really do this when I travel.  I usually make do with making myself fruit smoothies. But yesterday, we raided Costco and got a variety of fresh fruits – peaches, strawberries, blueberries and green seedless grapes.

A nice fruit salad for breakfast was exactly what my stomach was craving.  So I have to take a chance while the fruits are fresh and in season, no??



1 peach
1 strawberry
A handful of blueberries
About 10 grapes
A squirt of agave nectar
  1. Clean well all the fruits and peel them if you prefer. I peeled the peach…
  2. Mix them all together in a nice pretty bowl and drizzle the agave nectar on top.


Plum and Blueberry Crisp

I am not the most proficient baker, particularly when having to make something for 20+ people…   so when Angie at the yoga center asked me to help her with a dessert for the yoga center, I usually think of something fruity and simple that will not require lots of kneading or beating.  Because with as many kitchen implements there are at the center, there is not an electric mixer.

I remembered a few episodes of Good Eats and Barefoot Contessa where they made fruit cobblers or crisps.  I always enjoyed the cherry cobblers when I used to eat at Bonanza.  But I guess something fresher than cherry pie filling would be more suitable for the buffet dinner at the Yoga Center.

We used gluten-free flour mix and non-dairy shortening to accommodate for the many allergies and tastes at the center…  although I have seen MANY eat wheat and cheese galore when traveling and they present no “allergies issues”…  go figure, huh?



4 lbs of fresh plums
12oz of blueberries – I used frozen
2/3 cup of organic granulated sugar
5 tbs of cornstarch
1 tbs of lemon zest
Juice of 1 lemon
For the Topping
1 1/3 cups of gluten-free flour
1/3 cup of brown sugar
1/3 cup of organic granulated sugar
¼ tsp cinnamon
2 sticks of non-dairy “butter”, cut into small pieces – I used Earth Balance and I recommend maybe freezing it before using
1 cup of walnuts, toasted
  1. Bring a large pot of water to a boil.  Wash the plums well and cut an X at the bottom of each fruit using a paring knife.  Place the plums in the hot water for about 1 minute until you see the skins start of peel off.  Transfer the plums to a large bowl with ice water using a large colander.  This will stop the cooking immediately…
  2. Peel the plums, which should be easier after they’ve been blanched.  Slice them into ½” slices. 
  3. Place the sliced plums in a large baking dish.  Add the blueberries, the lemon zest, lemon juice, 2/3 cup of sugar and cornstarch.  Mix well together. Set aside.
  4. Pre-heat oven to 350F.
  5. In a separate bowl we’ll mix the crisp topping – the gluten-free flour, brown sugar, granulated sugar, cinnamon, walnuts and non-dairy butter.  Using your hands (or maybe even better an electric hand mixer) mix well all the ingredients to achieve a cornmeal texture.  If the “butter” is not super well chilled you’ll make a huge mess.  It’s still taste good, but be ready for a messy mess in your hands.
  6. Drop pieces of the crisp topping over the fruits.  The topping does not need to evenly cover the fruits, but try to have globs of topping as evenly spaced as possible over the fruits.
  7. Bake in oven for 20-25 minutes until the topping gets as golden brown as possible.  I did this in an oven that’s not mine and I had to increase the temp a bit to 385F for about 10 minutes to get a nicer golden color.


Allow the crisp to cool down for about 1 hour before you serve it.  It’s delicious warm or even room temperature.  A nice scoop of vanilla ice cream wouldn’t be bad either.

The dessert was a complete hit… that’s why we’re posting here for all to have access to it.  Enjoy!!!

Antioxidant Shake

Berries are the fruits with one of the highest contents of antioxidants.  Antioxidants are the substances that  help our body fight the effects of aging.  So, if you want to stay young and pretty, we need to consume foods with a high antioxidant content.

When I looked at the list I was pleased because I eat all of these foods on a pretty constant basis.  So I am well on my way to maintain my youthful appearance – hopefully!!

I want to share with you another one of my fruit smoothies that is chock-full of berries – perfect as a breakfast drink or as a late night treat too.




5-6 strawberries
2 handfuls of blueberries
8oz pomegranate juice
¼ cup of yogurt or kefir
2 tbs agave nectar
5-6 ice cubes
  1. Mix everything in a blender and enjoy.


I love the berry flavor of this shake.  I also make it sometimes with pineapple juice and the taste is just as good.  I do not strain it, as the seeds tend to go to the bottom of the glass, but I would strain it if you add raspberries – their seeds are just to big and they feel grainy when drinking.

BB Shake

We definitely need to integrate more fruits and vegetables in our diets.   I’ve heard the saying that we need to eat “the rainbow” – eat food from all the colors of the rainbow throughout the day.

Let me give you an idea for purple… the BB Shake.  I am sorry if I am turning into Rachael Ray naming the inventions I create in the kitchen.  To be honest, I do it so I can keep track of them.  Because if I’d name everything only by the main ingredients it contains, the picture folder names would be ultra long.

No matter how I name it or you want to call it, this shake is GOOD!!!  The B’s come from the Banana and the Blueberries in the recipe.  So it’s basically a Banana Blueberry Shake.  You can make it vegan or not… just play around with the ingredients and enjoy a great breakfast drink full of antioxidants and potassium.





1 banana
1 handful of blueberries
¾ cup of pineapple juice
½ cup of yogurt or kefir – I use the plain kind, but vanilla would also work nicely
A big squirt of agave nectar
2-3 cubes of ice


  1. Mix everything in a blender.


If you rather not consume anything dairy… this shake works equally well without the yogurt/kefir.  If the shake is too think, add a bit of water or extra juice and it should loosen up.

Stealth Shake

I’ve been reading a lot about Green Shakes on the media lately… shakes that include a special, very nutritious ingredient to boost the nutritional value of the shake you’re drinking.

I was intrigued to know how this concoction would taste and I decided to give it a try…  I added all the ingredients I saw in a TV segment, but I was hesitant.  So before I turned on the blender, I added some berries to make sure the taste would be appealing to me.

The result…  The Stealth Shake.  All the nutrition of the green ingredient and all the fruity taste.  A very successful experiment indeed.




1 banana, peeled and sliced
1 handful of fresh baby spinach
1 handful of blueberries, washed
2 strawberries, hulled and quartered
1 cup of pineapple juice
A squirt of agave nectar
2-3 ice cubes


  1. Mix everything in a blender for a few minutes and enjoy!!!


Can you see the spinach??  And believe me – you’ll not be able to taste it either!!!!  It tasted super fruity and delicious.  A shake filled with antioxidants, this is a great way to include spinach into someone’s diet without them even know it…
