Papaya Mango Fruit Cup

Here’s the fruit cup… redefined. Ever since I finished my July 4th retreat I’ve been on a fruit thing. I have always mentioned you how I need and want to eat more fruits, but I am sometimes lazy. I’m getting over the laziness now. I am trying to have 3-4 fresh fruits on hand to eat as breakfast or a a snack while watching TV. Costco helps because I need to buy fruit in bulk and makes me eat fruit every day, several times a day before they spoil on me…

My favorite fruit salads are made from acidic and sub-acidic fruits… citrus, berries, kiwis, pineapple, grapes, peaches, plums, etc. I have made two of these Acid Fruit Salads for you already… But I also sometimes enjoy a sweet fruit combination – Papaya and Mango.

Papaya and Mango are both very soothing fruits to your system. They’re perfect when you’re feeling under the weather stomach-wise. I like this combination when finishing my days of fasting.

PAPAYA AND MANGO FRUIT CUP

Papaya, cut into small pieces, about ¼ of a small papaya
Mango, cut into small pieces
Hanfdul of raisins
Drizzle of Honey or Agave Nectar
Sliced almonds, optional but highly recommended

You determine how much is enough for your appetite…is I never measure, as you already know. This is more assembling the components than a recipe, really.

  1. Mix all the fruits together in a bowl. Drizzle with a bit of honey to add a tad of sweetness.
  2. Sprinkle with sliced almonds. I didn’t have any the other day, but I wanted to share this with all of you…

Acid Fruits Salad 2

It’s summertime… and coming out of a retreat where I have not eaten cooked foods for the last 6 days, I am still not ready to cook anything complicated again. Although, I would eat anything and everything being from the latest Vegetarian Times Magazine issue… no kidding.

I never have the time or energy to make a fruit salad just for me…  I always mean to eat fruit salads for breakfast, yet I only get to really do this when I travel.  I usually make do with making myself fruit smoothies. But yesterday, we raided Costco and got a variety of fresh fruits – peaches, strawberries, blueberries and green seedless grapes.

A nice fruit salad for breakfast was exactly what my stomach was craving.  So I have to take a chance while the fruits are fresh and in season, no??

 

ACID FRUIT SALAD 2

1 peach
1 strawberry
A handful of blueberries
About 10 grapes
A squirt of agave nectar
  1. Clean well all the fruits and peel them if you prefer. I peeled the peach…
  2. Mix them all together in a nice pretty bowl and drizzle the agave nectar on top.

 

Ricotta and Berries

My favorite breakfasts include fruits… especially now that we’re starting summer and the berries are all in season.

Last week we spent a few days at my sister’s home and I love going to the farmer’s market to get a bunch of berries to serve at breakfast. But eating strawberries, raspberries, blueberries and blackberries on their own may seem to you a little boring. Why not mix them up with a little cheese??

Italians use ricotta cheese in both savory and sweet dishes… morning, noon and night. So taking a little inspiration from the land of the mammas, here’s my latest breakfast concoction.

RICOTTA AND BERRIES

Mix your favorite fresh berries – strawberries, raspberries, blueberries and blackberries, sometimes you could even add grape tomatoes. Hey, they’re berries too!!
1 cup ricotta cheese
1 tbs agave nectar, plus more to drizzle on top
  1. Mix in a bowl the ricotta cheese and the agave nectar to give it some sweetness.
  2. Add your favorite mix of berries.
  3. Drizzle some additional agave nectar on top.

 

It’s creamy and tangy at the same time… you could also use honey if you prefer instead of the agave nectar.

Berries and Tomatoes... go well together!!!

Breakfast Granola Parfait

I mentioned recently how I love the combination of fresh fruit, granola and yogurt for breakfast… so the other day I wanted to share it with my mom and friend. But I wanted to make it look pretty. That’s when I had the idea to layer it into a parfait. It would look far prettier than just mixing everything haphazardly in a bowl.

 

BREAKFAST GRANOLA PARFAIT

1 cup ricotta
1 cup vanilla yogurt
Squirt of honey
2 cups fresh strawberries, quartered
1 tbs brown sugar
2 cups granola
  1. In a bowl, mix the cut berries and mix in with the brown sugar to macerate. Allow the berries to release some of their own juice about 10 minutes.
  2. In a separate bowl, mix together the ricotta cheese, yogurt and honey. Mix together well.
  3. In parfait glasses, or just some old-fashioned glasses, layer all the components – First add some yogurt/ricotta, then some fruit and end with some granola. Repeat again, yogurt/ricotta, fruit and granola. End up it some additional fruit on top.

Serve immediately. Serves about 3 parfaits.

The flavors are spectacular and the presentation is really nice, especially if you are entertaining for breakfast or brunch when you have special company, don’t you think??

My new Favorite breakfast…

I love breakfast foods. And I could eat breakfast foods all day…

Well, a few weeks ago I discovered this local bakery that sells their breads and granola at local health food stores. I encountered this granola, partly recommended by a guy who was demonstrating an açaí sherbet and juice. He served the sherbet with pieces of banana and granola. I liked the sample so I bought the sherbet and the granola. If there’s any testament to how much I like the granola, the sherbet still sits untouched in my freezer and I am in my third bag of granola already…

Nowadays, my favorite breakfast combination is to mix fresh fruit – strawberries, peaches, papaya, pineapple, etc. – with yogurt, honey and about ½ cup of Granola from La Hogaza. I’ve never been fond of eating dry cold cereal with milk in a bowl. But, I like the granola mixed with yogurt because it stays super crunchy until the last bite.

Besides my usual fruit-based smoothies, I love that I have a new way of getting my fruit for breakfast. Every morning I look forward to my granola/yogurt mix… it may not look all that good all jumbled together, but it tastes amazing.
